This morning we visit Duke Alexander Chavchavadze’s estate which used to be the hub of different European and Russian poets, writers and public figures in the 19th century.
Later, we continue to take part in Georgian’s one of the most favourite culinary rituals-Churchkhela-making (Churchkhela is a traditional candle-shaped candy made from grape must, walnuts and flour) and bread-baking in a deep,circular clay oven)
In the afternoon we head to a 16th century winery and attend a lecture about the history of vines in Georgia and taste different red and white wines in their wine-museum. We take you for a lunch in a local winery to taste some typical East Georgian delicacies in their relaxing park-restaurant.
We arrive in Tbilisi in the evening and check in our hotel.
Farewell dinner will be held in Georgian restaurant with traditional dances and polyphonic concert.

Leave the excitement of the Capital city and head out to the rugged romance of the East Georgian plains, where local pheasants have been making wines in clay qvevris (Amphorae) for over 8,000 years.
First we visit the town of Signaghi – a place of romance and love as it has been called in recent years. Perched on the mountain cliff with its 4,5 km. long defensive wall of the 18th century Sighnaghi is one of the prettiest towns of the country which still retains its original scent and style with its narrow, cobbled streets full of one or two storey houses with bright red tiled roofs and beautifully carved balconies. The city has wonderful views over the Alazani Valley to the snow capped Caucasus Mountains beyond.
Our alfresco lunch will be held by a local family in their house where we will have the unique chance to taste delicious Georgian home-made dishes and drinks: including Mtsvadi- Pork barbeque marinated in pomegranate sauce and roasted over a grapevine wood fire, Chakapuli (veil stewed with white wine, green plums and tarragon leaves) as well as home-made brandy and chacha(vine spirit)
After lunch we visit Gremi Castle- once a symbol of the thriving cultural and political life of Kakheti Region. Giving an impression of floating in the air over the river, the Gremi Complex includes the church of Archangels with its beautiful frescos and adjacent royal tower as well as the ruins of different old bath-houses and watchtowers.

After breakfast we drive back to Tbilisi and enjoy unforgettable excursion and brandy tasting in Sarajishvili Brandy factory established in 1882.After the private guided tour there, we continue to our hotel and enjoy free evening for personal exploration of the capital city of Georgia

After breakfast we will start our morning tour by visiting the local open-air peasants’ market where we will enjoy the multi-scented ambiance of different herbs, spices, sugar dusted dried fruits, seeds and a variety of chili powders.
Our main destination of the day is Samegrelo region-motherland of its signature cheese-Sulguni (sour, moderately-salty, semi-elastic type) and Adjika(hot and spicy sauce with red pepper, garlic and dried spices). Visiting a local farm nearby the town of Zugdidi we will take part in cooking process and prepare several authentic Megrelian dishes :Elarji (coarse cornmeal, corn flour and Sulguni cheese. ),Kharcho ( spicy beef soup with rice) and Rachuli Lobio (Pinto beans cooked with homemade smoked pork belly, onions, fresh herbs & Georgian spices).
On our way back, we visit another UNESCO World Heritage Site of West Georgia-Gelati Academy(12th c.)

We leave the Caucasus Mountains this morning heading to West Georgia .En-route we visit Ulistsikhe-ancient town with palaces, hallways, streets and amphitheatres carved into the massive mountain slope. Established in the 2nd millennium B.C as a pagan temple-town, it later became an important base for traders on the Silk Road, on their way from China to Europe.
For lunch we visit the village of Ateni- one of the Georgia’s famous wine-making micro-zones where the vines are trained to grow in a vertical manner on pergola type structures. Here we have chance to enjoy wine-tasting and cookery classes at the house of local art-master.
We arrive in the town of Kutaisi in the early evening. Time permitting, we may take a gentle stroll towards Bagrati Cathedral (11th c.)-one of the UNESCO World Heritage Sites of Georgia erected on the remains of the ancient acropolis of Colchis-gold-rich kingdom of West Georgia in the 2nd-1st millennia B.C
For our dinner we taste local delicacies : Khachapuri ( home-made Imeruli cheese melted inside yoghurt dough) and Satsivi(Organic, grass-fed chicken cooked in walnut sauce & Georgian spices )

After breakfast, we leave behind magic charm of Tbilisi making our way north to the snowy glaciers of the Caucasus Mountains via Georgia’s breath-taking Great Military Highway, once connecting Oriental countries to the Roman Empire.
In the Afternoon we arrive in a small mountainous town of Stepantsminda-the last city at Georgia-Russian Border. We are welcomed at a local shepherd’s family where we will prepare and taste several traditional mountainous dishes including Georgia’s signature mouth-watering mountain staple –Khinkali (dumplings stuffed with a robust mixture of meat, spices and herbs), river trout fried on a spin and wild herbs salad as well as home-made honey and fruit-based alcohol drinks.
After lunch we go for a rough drive in a 4 WD car along the forested slopes of the mountain to Gergeti Trinity church (14th century) to enjoy great views of different glaciers of the Caucasus Mountains including mount Kazbegi (5047m).

Your first day will start with privately guided walking tour in Tbilisi. You can learn about Georgia’s 1500 years old capital while strolling in its old town exploring Medieval churches ,caravanserais as well as Silk Road districts now housing different bars, restaurants and wine-cellars.
The tour will take you to St. Mary’s Church of Metechi-one of the most prominent landmarks on the city’s skyline, then we continue to the Old Sulphur Baths built on hot mineral springs before taking a gondola up to the city-castle.
After a morning full of history and sights, it is time to learn about Tbilisi cuisine. The afternoon will be spent with local culinary master who will host you on her traditionally decorated house and garden placed in peaceful and idyllic surroundings. Under her guidance you will prepare and taste a four-course menu using only local ingredients and follow traditional recipes:
- Welcome home-made bio wines from exclusive boutique wineries
- Cold appetizers: Egg-plant with walnuts, Stuffed tomatoes and cucumbers
- Soup: Yoghurt soup with dill
- Hot dish: Chakhokhbili(Stewed chicken with fresh herbs)
- Dessert: Gozinaki( confection with caramelized walnuts fried in honey)
After lunch we will enjoy a pleasant walk along Rustaveli Avenue-the main artery of this lovely and relaxed town before driving back to our hotel.
Our dinner will be held in a restaurant of the old caravanserai.
